<p>Why is bamboo so popular as an eco-material? Several reason. It can grow almost everywhere and thrive in many different climates, from jungle to the frozen northern climates. Bamboo increases the production of oxygen &#8211; as much as 30 percent more than most other plant species such as a hardwood forest, even though it&#8217;s not a tree, but a member of the grass family.It can grow up to two inches in a single hour. Most varieties mature in five years or less, so the harvest cycle is much shorter than that of trees, which can take decades to mature to a harvestable stage.</p>
<p>Bamboo can be made into almost anything, from paper to clothing to flooring. It has a tensile strength greater than steel, so it is an ideal building material. In fact, you could build your house, furnish it and fill the closets with clothing, with just bamboo-based products.</p>

<p>Gourmet mushroom growers, large and small, always end up with harvested mushrooms that are not good enough for fresh sales to consumers. The mushrooms may have cosmetic defects, or you may have more mushrooms than customers. One of the best ways to turn that surplus into profits is to make value-added products to market that can be stored until sold.</p>
<p>Here are six of the best value-added mushroom products &#8211; all easy to process, and requiring no expensive equipment or packaging:</p>
<p><strong>1. Mushroom jerky.</strong> This is a popular snack for vegetarians and non-vegetarians as well. Oyster mushrooms are best, and easy to prepare. Simply remove the gills, clean and marinate in diluted soy sauce (1 cup water and 2 tablespoons soy sauce) for an hour or so, then drain. Bake until tender, then place in a food dryer/dehydrator until dry. Package in plastic bags with a well-designed label. These are delicious, so be sure to give out samples to passerby&#8217;s at the farmer&#8217;s market.</p>
<p><strong>2. Pickled mushrooms.</strong> These have been a popular snack in Europe for centuries, and can be customized with other foods, like onions, or seasoned with a variety of herbs or spices, like garlic. Start with a basic recipe &#8211; just do an internet search for &#8220;pickled mushrooms&#8221; &#8211; then pick the recipe that works best for your taste buds. If you use your imagination, you can transform plain pickled mushrooms into a gourmet delicacy that brings high prices and profits at the Saturday market. Imaginative packaging, such as a special glass jar, a cute label and a simple raffia bow on the jar, can complete the gourmet image.</p>
<p><strong>3. Mushroom seasonings.</strong> A blend of finely ground dried mushrooms and coarsely-ground sea salt is a popular item at farmer&#8217;s markets, as well as blends of mushroom powder and dried herbs, such as an Italian blend, which complements a roasted chicken or a savory soup.</p>
<p><strong>4. Dried mushrooms.</strong> This is a perfect solution for blemished or unsold fresh mushrooms. Most mushroom varieties can be dried whole or dried in slices about 1/4 inch thick. You&#8217;ll need a food dehydrator and packaging. Re-sealable glass jars work best, both for eye appeal at the farmer&#8217;s market, and for ease of re-use. A customer can just tighten the lid to save any unused mushrooms for later.</p>
<p><strong>5. Mushroom growing kits.</strong> Simple to make and very profitable, these one-use kits allow customers to experience the joy of growing and harvesting their own mushrooms without the work involved in preparing and inoculating the substrate. Most consist of just a plastic grow-bag filled with pre-innoculated substrate, such as sawdust, inside a cardboard box. Because shipping is expensive, you can sell kits locally for a lot less than those sold on the internet, yet still make a solid profit. If at all possible, have a sample growing kit on display, complete with fruiting mushrooms, to help customers visualize what will happen at harvest time.</p>
<p><strong>6. Medicinal mushrooms.</strong> Although many varieties of mushrooms are used for medicinal purposes, the F.D.A. does not allow anyone to make claims about their healing powers, especially claims that XX mushrooms can cure XX disease. Medicinal mushrooms can be sold fresh, dried or powdered to individual retail customers. Follow the example of supplement companies, who simply state that mushrooms can be used to &#8220;help support immune health.&#8221;</p>
<p>Mushroom growers should follow state and federal regulations and any applicable food safety guidelines, including those that may be applicable to prepared mushroom products. Your state regulations may also require that food must be processed in a licensed kitchen. In some states, those selling at farmer&#8217;s markets or direct to consumers from the farm may be exempt from this requirement. Your local county health department can tell you what regulations apply in your area.</p>
<p>As more growers produce and market fresh gourmet mushrooms like oyster mushrooms and shiitake mushrooms, those who also offer mushroom products will be better able to compete in the marketplace, as the markups can be substantial on value-added products. <p>One of the best ways for small specialty crop growers to increase their profits is by adding value to their plants by taking an extra step beyond just selling their unprocessed harvest. Using simple value-added techniques can increase your profits by 100 to 1,000 percent!</p>
<p>For instance, my neighbor has grown sedums for years, selling them at the local Saturday market in the standard 4-inch plastic pot. She has done well, but her sales &#8211; and her profits took off like a rocket after her husband suggested selling the plants in decorative hypertufa pots.</p>
<p>Every winter, using the standard hypertufa mix of perlite, peat, sand and portland cement, they make hundreds of small and large pots in a variety of shapes, using old tupperware from the thrift shop and scrap plywood and styrofoam for molds. Carol makes fused glass art, and uses the rejects and scraps, which are embedded in the outside of the pots, to add a bit of color. Almost any colorful material &#8211; &#8220;penny&#8221; tiles, for example &#8211; can be added to the pots as well.</p>
<p>When the hypertufa pots have cured for a month, they are filled with potting soil and sedums, which are grown out until the first Saturday market in the Spring. Now, instead of a $3 plant, she is able to sell her plants in hypertufa decorator pots for $25, selling thousands of dollars worth every spring and summer.</p>
<p>If you are growing for market and want to get 5 to 10 times more money for your plants, get creative and find ways to add value. Here are a few more examples:</p>
<p><strong> Bamboo</strong> &#8211; This popular plant brings a good price when potted and sold for landscaping. Several small-scale bamboo farmers have found success and profits by producing traditional products from the harvested bamboo canes as well. One North Carolina grower weaves the small bamboo canes into a traditional Japanese &#8220;Otsugaki&#8221; style fence, selling them in panels to local homeowners for as much as $100 each.</p>
<p>Another enterprising bamboo growers turns short pieces of bamboo cane into garden art, such as a rocking fountain based on an ancient Asian design used to scare deer out of the garden with a gentle clacking sound. Materials cost under $10, mainly for a small aquarium water pump, and the completed fountains sell for about $100 by mail and in specialty catalogs and at local nurseries.</p>
<p><strong> Food products</strong> &#8211; Turning your specialty crop into a food products can bring far greater profits for growers. From the more traditional jams and jellies to the more exotic specialty foods, your imagination is the only real limit to what can be created. One garlic grower has found success with a garlic-cherry chutney based on a traditional recipe from Cremona, Italy called mustarda.</p>
<p>Others have re-invented that kitchen staple, vinegar, with new flavors and varieties using plants harvested from their market gardens, such as rose hips and other flavorful flowers. Here are a few of the most popular value-added food products being sold right now at farmer&#8217;s markets and specialty food stores:</p>
